Coffee Extraction Explained: Why a Brew Can Taste Sour, Bitter, Thin or Dry
“Sour means under-extracted and bitter means over-extracted” is a useful beginner shortcut—but real coffee is more complicated. This lesson teaches the shortcut and its limits.

What you need to know first
Extraction is the process of water dissolving soluble material from ground coffee. Grind, time, water, temperature, agitation and brew ratio all influence how much is extracted. Low extraction can often present as sharp sourness or thinness; higher extraction can increase bitterness or dryness—but roast, bean, water and personal taste also matter.
Water takes soluble material out of coffee
The important phrase is for you. Modern brewing research shows consumer preferences spread across different strengths and extraction levels. Coffee quality cannot be reduced to one perfect number for every person.
Six variables you can actually change
Longer contact can increase extraction.
More water relative to coffee can change both strength and extraction.
Hotter water can speed extraction, but final strength and extraction matter more than temperature alone.
Stirring, swirling or flow can affect how water contacts the grounds.
Uneven flow or channeling can make one part of a coffee bed extract differently from another.
Translate taste into one next experiment
Try going a little finer or extending contact, while holding other variables steady.
Try a little coarser or shorter contact. Also check whether the roast itself is quite dark.
This may be more about brew strength than extraction. Consider the coffee-to-water ratio.
A concentrated cup can still be under-extracted. Strength and extraction are different measurements.

Friend: How long is the brew taking?
You: It’s running through really fast.
Friend: Try going a little finer before you change the dose.
You: So keep everything else the same and test the grind?

Temperature is important—but not magic
SCA-reported research found that when brew strength and extraction were held similar, changing brewing temperature across the tested range had relatively little sensory impact. Temperature still affects how quickly extraction happens, so it remains part of the process.
For learners, the practical point is: avoid simplistic rules such as “hotter water always tastes more bitter.” Coffee brewing variables interact.
One brew can be sour and bitter at the same time
Beginner diagrams often show extraction as a neat line from sour to balanced to bitter. Real brewing can be uneven. Water may move quickly through one part of a coffee bed and slowly through another. In espresso this is often discussed as channeling; in pour-over, uneven pouring or a disturbed bed can also create uneven extraction.
That means a cup can contain flavours associated with both low and high extraction. If the coffee tastes confusing rather than simply “too sour,” check technique as well as grind. Was the coffee bed level? Did water bypass part of it? Was the pour concentrated in one place? Did the espresso flow unevenly?
The English skill is observation: “It ran much faster on one side,” “The bed looks uneven,” “The shot started spraying,” or “This tastes both sharp and dry.” Specific observations help another person diagnose the problem far better than “My coffee is bad.”
